My friend Penni...

Well, I need to post something, and I just wanted to compliment my friend Penni for all the hospitality she has shown me - the food she makes is wonderful. This woman can make up the most incredible desserts EVER... The food she prepares for meals are all wonderful as well. i did have to take issue though with her baked ziti... can you believe the nerve she had to use two different types of shredded mozzarella cheese??? One side had thick shreads, and one side had thin shreads - how is one to choose which side to eat off of?? It is all quite stressful as it is just having so many choices in America to begin with - she goes and makes me choose between thickly shredded mozzarella and thinly shredded mozzarella... goodness!!

In all honsesty, Penni has to be the best dessert maker ever. She made this cake the other day that when you take it out of the oven (it's chocolate)), you poke holes in it, and then pour sweetend condensed milk on it, the pour caramel topping over that. You let it sit and soak for a day, and then frost it with cool whip and cover with crushed candy bar... oh my. The high you get from that thing rivals any drug you take.

Penni, her husband Jay, and their daughter Lydia took me out last night to my first trip to the Cheescake Factory. OH WOW! That was incredible. I'm still recvering from the yummy Bang Bang Chicken and Shrimp (it had a spicy curry sauce offset by sweet crunchy coconut - yum!), and then caramel cheesecake. And we shared an appetizer of Buffalo Blasts - these crazy chicken and cheese things with wings sauce. Needless to say we brought a ton of food home and re-feasted tonight.

I plan on updating my blog again tomorrow with my travel info for the next few weeks so you can be praying for safety and rest and fun - also let me know if you are close to any of the areas I'm traveling to, and I will do my best to see you... no promises, but I will try! Talk to you soon!

it's definitely just not right that i should have hear about this stuff when i'm stuck with cafeteria food every day of my current life. have you had the baked ziti from Chuck's?? ugh... i don't think they use real cheese at all.

it is great to have people like that in your life who are just so willing to host you and all.
